Pilsen malt produced from high quality malting barley finalized by kilning at precise temperatures could be used ideally for bottom fermented beers such as lagers and specialty beers with various original wort gravity. These malts give congress worts and beers with paler colour, provides adequate level of proteolytic activity, sufficient activity of amylolytic enzymes to assure perfect saccharification of wort.
